02 - 1 ripe mango, peeled and diced
03 - 1 cup seedless watermelon, diced

06 - 1/2 cup blueberries

07 - Juice of 1 lime
08 - 1 tablespoon honey or agave syrup (optional)

09 - 2 tablespoons shredded coconut (unsweetened or sweetened)
10 - Fresh mint leaves

# Directions:

01 - Cut the pineapple in half lengthwise, keeping the leaves attached for presentation.
02 - Carefully cut around the edges of each pineapple half and scoop out the flesh, leaving a 1/2-inch shell to create boats. Dice the pineapple flesh, removing the tough core.
03 - In a large bowl, combine diced pineapple, mango, watermelon, kiwi, strawberries, and blueberries.
04 - In a small bowl, whisk together lime juice and honey or agave syrup if using. Drizzle evenly over the fruit and toss gently to combine.
05 - Spoon the mixed fruit salad evenly into the prepared pineapple shells.
06 - Sprinkle shredded coconut over the filled pineapple boats and garnish with fresh mint leaves.
