# Directions:
01 - In a medium bowl, gently mix softened goat cheese, chopped dried cranberries, thyme (if using), honey, and black pepper until just blended.
02 - Transfer mixture onto plastic wrap, shape into a log, wrap tightly, smooth the surface, and refrigerate for 15 to 30 minutes to firm.
03 - Toss fresh strawberries, blueberries, raspberries, and torn mint leaves (if using) gently in a bowl.
04 - Unwrap the firm goat cheese log, place it on a serving platter, arrange berries around it, and serve immediately with crackers or baguette slices.
