09 - 10 oz cremini or white mushrooms, sliced

11 - 2 cloves garlic, minced
12 - 1 tablespoon all-purpose flour
13 - 1 cup beef or vegetable broth (240 ml)
14 - ½ cup milk or cream (120 ml)
15 - 1 teaspoon Dijon mustard
16 - 1 teaspoon Worcestershire sauce
17 - ½ teaspoon dried thyme
18 - Salt and ground black pepper, to taste
19 - 2 tablespoons chopped fresh parsley (optional for garnish)
# Directions:
01 - Place pork chops between two sheets of plastic wrap and gently pound until about ½ inch thick. Season both sides evenly with salt and black pepper.
02 - Arrange three shallow dishes: one with flour, one with beaten eggs, and one with plain breadcrumbs. Dredge each pork chop in flour, then dip in eggs, and finally coat with breadcrumbs, pressing gently to adhere.
03 - Heat vegetable oil to approximately 350°F in a large skillet over medium-high heat, maintaining about ¼ inch depth. Fry cutlets in batches for 2 to 3 minutes per side until golden brown and cooked through. Drain on paper towels and keep warm.
04 - Melt butter in a separate large skillet over medium heat. Add finely chopped onion and cook until translucent, approximately 3 minutes. Add sliced mushrooms and sauté until softened and golden, about 5 to 7 minutes. Stir in minced garlic and cook for an additional minute.
05 - Sprinkle flour over mushroom mixture and stir to combine. Gradually whisk in broth, then add milk or cream, Dijon mustard, Worcestershire sauce, and dried thyme. Simmer gently for 4 to 5 minutes until sauce thickens. Season with salt and black pepper to taste.
06 - Plate schnitzels hot, generously topping each with mushroom gravy. Garnish with chopped fresh parsley if desired.
