Fusilli with Bacon, Mushrooms (Printable version)

# What You’ll Need:

→ Pasta

01 - 12 oz fusilli pasta

→ Meats

02 - 5 oz smoked bacon, diced

→ Vegetables

03 - 1 large yellow onion, thinly sliced
04 - 9 oz cremini or button mushrooms, sliced
05 - 2 cloves garlic, minced
06 - 2 tbsp fresh parsley, chopped

→ Dairy (optional)

07 - 1/3 cup freshly grated Parmesan cheese

→ Pantry

08 - 2 tbsp olive oil
09 - Salt, to taste
10 - Freshly ground black pepper, to taste

# Directions:

01 - Bring a large pot of salted water to a boil. Cook fusilli according to package directions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set aside.
02 - Heat olive oil in a large skillet over medium heat. Add diced bacon and cook until crispy, about 4 to 5 minutes. Remove bacon and drain on a paper towel-lined plate.
03 - Using the same skillet, add onions with a pinch of salt and sauté for 2 to 3 minutes until softened. Add mushrooms and cook until golden and most moisture has evaporated, approximately 5 to 6 minutes.
04 - Stir in minced garlic and cook for 1 minute until fragrant.
05 - Return crispy bacon to the skillet. Add drained fusilli and a splash of reserved pasta water. Toss over medium heat for 1 to 2 minutes until well combined and heated through. Season with salt and freshly ground black pepper to taste.
06 - Remove from heat, sprinkle with chopped parsley and Parmesan cheese if desired. Serve immediately.
