# Expert Advice:

01 -
  • They come together in under 20 minutes of actual work, which means you can make them while everything else is happening.
  • The contrast of warm melted Brie, sharp chili heat, and floral honey feels fancy but tastes like you barely tried.
  • People always ask for the recipe, and you get to watch their faces when they realize it's just three ingredients plus pastry.
02 -
  • Overfilled bites leak, and leaking filling burns on the pan and tastes bitter—measure your honey and chili crisp, it matters more than you'd think.
  • If you let them cool completely, they're still good but the cheese won't be quite as luxuriously melted, so serve them warm and watch people's faces.
03 -
  • If your pastry starts to get too warm or sticky while you're working, pop it back in the freezer for five minutes—it's much easier to handle when cold.
  • Brush your egg wash gently so you don't deflate all the air you've created in the folds.
